Winemaking Notes: The 2019 Night Moves Gamay noir was harvested on October 24 and October 30, 2019. After sorting, the grapes were transferred to stainless steel as 60% whole cluster and 40% destemmed fruit for fermentation using non-selected yeast. Using only gentle punchdowns, the wine spent 45 days on skins, before being drained and having the free run wine separated from the press wine. After 15 months of aging the wine was taken out of barrel and transferred to stainless steel for cold settling and clarification. On March 26, 2021 the wine was bottled without fining or filtration.
