Cows Creamery Avonlea Clothbound Cheddar is handmade in the style of the great traditional English cheddars. It has a firm texture with rich, complex flavours and the aroma of fruit and toasted nuts. Aged for 12-16 months in high humidity, cloth is applied to the exterior of the wheels, allowing the cheese to breathe resulting in a rich, robust flavour. The farm's first cheese and an award-winning cheese for over a decade.
This cheese is made with unpasteurized milk. The milk is gently heated, which preserves the microorganisms and enzymes in raw milk that give cheddar its characteristic flavour.
