Mad Mexican's Pollo Pibil is a traditional preparation of this specialty taco filling of the Yucatan peninsula; chicken marinated with achiote sauce and citrus juice, wrapped in banana leaves, slow roasted to perfection.
This product is cooked, vacuum-sealed and frozen for your convenience. Heat from frozen and serve for easy and delicious restaurant-quality tacos at home any night of the week!
250g bag - makes 4-6 tacos
1. Place the vacuum sealed bag in a pan filled with boiling water for 7-10 minutes. If frozen, leave it in boiling water for 12-15 minutes
2. Cut open bag carefully (caution: it will be extremely hot)
3. Place it on top of warm tortillas or with any other combination that you prefer, and enjoy!
Made some tacos, mango salsa, tomato salsa and guacamole to go with this and the pork fillings. Was an amazing easy (yes all those things are actually easy to make from scratch) and had an amazing dinner for three with leftovers.
