5 Brothers Cheese is a handcrafted washed rind cow's milk cheese that combines traits from Gouda and another Swiss variety called Appenzeller. It's a firm cheese, delicately aged on cedar wood planks for 8 months, which adds robust flavours to the cheese. Described as having rich and creamy favour with sweeter overtones and distinctive eyes throughout the body of the cheese. It pairs well with white wines such as Chardonnay and Sauvignon Blanc and also Pilsner beers.
Beau's Abbey Style Cheese is a delicious marriage of Gunn's Hill Oxford's Harvest cheese with Beau's All Natural Brewing of Vankleek Hill, Ontario. This sumptuous semi-soft cheese is washed every other day with a seasonal beer from Beau's for a unique and very Ontario flavour.
Brigid's Brie is a soft surface ripened cheese made with cow's milk from the Gunn's Hill family farm. This brie is free of stabilizers and preservatives and thus sold with a 'best between' date for your enjoyment. Each batch is aged six weeks and is delicately handled to preserve its creamy centre. Best enjoyed on its own or with a flavoured jelly such as red pepper jelly.

These were all delicious and a very nice assortment for a quick and painless charcuterie board. I haven’t seen the Beau’s cheese sold anywhere else and we loved it. Brigids Brie is my new favourite Brie!
